Then maybe I could get my computer to stop being an asshole freaking out and just do what I ask of it.

Not even going to mention that, yesterday, when I stepped out for a mere hour,  Hubby decided to help me ‘fix’ the dang thing.  When I came back, he had somehow managed to hide ALL my files.  And then left for work.

Not realizing the files were hidden, I thought they were deleted.  Irreplaceable pictures (of Rat Boy, an unforgettable Sweet 16 Birthday, food I haven’t had the time to blog about yet), documents, and oh yes…the tax returns from the last 3 years.

FREAK OUT TIME!!!  😛

Thoughts of murder briefly crossed my mind.

Fortunately, Rat Boy was Skyping with one of his friends.  Miraculously, this very nice young man offered some ideas, and all of my files were relocated, unscathed.  The same can not be said for Hubby, who, I’m betting will never touch my computer again!  ;-P

I still can’t understand how he could accomplish in less than 5 minutes something it has taken me a few hours of tedious clicking to un-do.

Oh well, chillax and have a wonderful Caturday, and enjoy the intermittent rain of our week of Spring.

Another week…

Last week, I had the pleasure of visiting with my good friend Aggie, as well as an opportunity to meet The Queen.  Thank you, rain!

This week, it’s back to work.  Sadly, not much in the kitchen, but instead a resumption of the tree battle.  Looks like we’re winning, it’s just one of those long, drawn-out affairs!

Yesterday, we actually bought a trailer to haul brush.  I feel like an honest to goodness Texan now.  I own a trailer.

We had borrowed one from Hubby’s friend.  Twice.  But the brush just keeps coming!  And though it was awfully nice and thoughtful of said friend to let us borrow his trailer, he’d like to use it also!  Go figure.

Plus, I was starting to get pretty tired of piling up the brush and small trees, then days later, moving them onto the trailer for disposal.  Seems like picking up a stick ONE time would be sufficient.  Especially when there are a LOT of sticks!  And trees.

Anyhow, I realize in my zeal to get the trailer, requiring a drive out to New Caney ( small town on the NE side of Houston ), I failed to post anything for Caturday, my favorite day of the week.

I contemplated this morning combining the words ‘cat’ and ‘Sunday’, and quickly discarded the notion.  I’ll let your minds stray about on that one.   😛

Instead, here is a late Caturday posting, with exciting pics of big pine trees being chain sawed to follow tomorrow!

I just happened to see this.  Though I generally wouldn’t post this, as I’m trying to remain multi-generational and family-friendly, I thought it was pretty hilarious, so must share.

Penne With Vodka Sauce and Veggies

Featuring quick and easy food is becoming a way of life as I continue to clear brush hoping to finally create a clearing large enough for a house.  We did away with the last of the double-size garage brush pile last weekend…two more truck and trailer loads.

This weekend, I’m imposing on Aggie’s awesome hospitality while the blessed rain falls.  We really do need the rain, even though Swamp Nomstress, aka the front yard, will shortly reappear.  I will refrain from waxing poetic about the joys of slogging through shin deep mud while toting small trees and get on with the food.

In the interest of saving my sanity time, I used a jarred sauce, which was pretty good.  I’ll go ahead and include the recipe to make the Vodka sauce with actual vodka just in case you’re feeling like a glutton for punishment purist!

Beginning with the usual suspects, garlic and onion.  Chop and cook until tender.

Add some sliced mushrooms.

I used boneless, skinless chicken thighs.  Trimmed WELL.  Cut into about 1 inch pieces.

Stir together and brown.

When the chicken is browned, add the vodka sauce and a can or two of roasted diced tomatoes, drained.

Stir together well, and let simmer for at least 30 minutes.  Leave off the lid so it’s not too soupy!  Then, add zucchini, cut into half moon wedges.

Let the zucchini cook for about 15 minutes, until it’s just becoming a bit soft, and add the spinach and peas.

Wilt the spinach for another 10 – 15 minutes.  It cooks down quite a lot, and you’ll want to put the lid on at this point.

Uncover and stir well.

Serve over penne with some hot bread.  You’ll feel so warm and fuzzy, but you’re actually getting a lot of great veggies, too!

To make the homemade vodka sauce:

1/3 cup vodka

15 oz diced tomatoes

8 oz tomato sauce

1/8 tsp red pepper flakes

1/2 cup half and half

1/2 cup Parmesan cheese (shredded)

Combine over low heat and stir until cheese melts and all ingredients are incorporated.

Fat free half-and-half is still creamy and rich, but keeps down the fat content.

Canadian bacon is an alternative to the chicken, also lean but loaded with flavor.
